Beef-Pork “Picadillo”

Ingredients
- 1 pound ground beef
- 1⁄2 pound ground pork
- 1 ounce olive oil
- 2 yellow onions, minced
- 1 red bell pepper, seeded & minced
- 4 garlic cloves, minced
- 2 teaspoons salt
- 2 teaspoons ground cumin
- 1 can (28 oz.) peeled tomatoes, crushed
- 3 bay leaves
- 1 ounce vinegar
- 1 cup green olives, pitted & stuffed
- 1 cup raisins
Directions
- In large pan over medium heat, cook onions and peppers in olive oil 7-8 minutes.
- Add garlic, beef and pork. Cook 2 minutes, until meat begins to brown. Use a wooden spoon to crumble meat.
- Add salt, cumin, tomatoes, bay leaves and vinegar. Lower heat to medium-low. Cover and continue to cook 25-30 minutes.
- Add raisins and olives. Uncover and continue to cook 12-15 minutes.
