Beef-Pork “Picadillo”

Ingredients

  • 1 pound ground beef
  • 1⁄2 pound ground pork
  • 1 ounce olive oil
  • 2 yellow onions, minced
  • 1 red bell pepper, seeded & minced
  • 4 garlic cloves, minced
  • 2 teaspoons salt
  • 2 teaspoons ground cumin
  • 1 can (28 oz.) peeled tomatoes, crushed
  • 3 bay leaves
  • 1 ounce vinegar
  • 1 cup green olives, pitted & stuffed
  • 1 cup raisins

Directions

  • In large pan over medium heat, cook onions and peppers in olive oil 7-8 minutes.
  • Add garlic, beef and pork. Cook 2 minutes, until meat begins to brown. Use a wooden spoon to crumble meat.
  • Add salt, cumin, tomatoes, bay leaves and vinegar. Lower heat to medium-low. Cover and continue to cook 25-30 minutes.
  • Add raisins and olives. Uncover and continue to cook 12-15 minutes.
