Berries with Coconut Cream
Don’t forget to chill the coconut milk! If you use coconut milk that’s at room temperature, it won’t whip up as easily and may not form peaks at all.

Ingredients
- 1⁄2 cup chilled full-fat coconut milk
- 1 tsp. granulated stevia
- 1⁄2 tsp. vanilla extract
- 1⁄4 cup blueberries
- 1⁄4 cup blackberries
- 1⁄4 cup raspberries
Directions
- Put coconut milk in a separate chilled bowl. Beat with a handheld beater until peaks begin to form, about 3 minutes. Beat in stevia and vanilla extract just until combined. Do not overbeat.
- Divide berries evenly between two serving bowls and top each with half the coconut cream. Serve immediately.
