Ingredients
- Cherry Compote Ingredients:
- 2 1⁄4 cups fresh cherries, pitted and sliced in quarters
- 1⁄4 cup sugar
- 3 tbsp. water
- 1 tbsp. cornstarch
- Graham Cracker Crust Ingredients:
- 1 1⁄2 cups graham cracker crumbs
- 1⁄2 cup unsalted butter, melted
- Chocolate Cheesecake Filling Ingredients:
- 2 packages cream cheese, 8 oz, room temperature
- 2 tbsp. sour cream
- 1⁄2 tsp. vanilla extract
- 1 cup semi-sweet chocolate, melted, and cooled
Directions
- To make the cherry compote, place all of the ingredients into a medium sized sauce pot then place over medium heat. Use a wooden spoon to stir constantly until the mixture begins to bubble.
- Allow the mixture to bubble and thicken for about 8-10 minutes then remove from heat and transfer to a heat proof bowl. Allow this to chill completely in the fridge for about 1 hour before assembling.
- To make the graham cracker crust, stir together the graham cracker crumbs and melted butter until fully combined. Set aside.
- To make the chocolate cheesecake filling, use an electric mixer to mix the cream cheese and powdered sugar until there are no lumps and the mixture is nice and smooth.
- Whisk in the sour cream and vanilla.
- Use a silicone spatula to fold the melted chocolate until it is evenly distributed throughout the cheesecake mixture.
- To assemble the jars, spoon a layer of graham cracker crust on the bottom. Do your best to pack it in. Next, spoon a layer of cherry compote. Pipe a generous layer of chocolate cheesecake on top of the cherry compote then spoon another layer of cherry on top.
- Pipe a small dollop of the cheesecake mixture on the last layer of cherry compote then stick a cherry on top. Repeat these steps for each one.
