- 2 lbs. bass fillets
- 2 Tbsp. vegetable oil
- 1 Tbsp. lemon pepper
- 1 Tbsp. paprika
- 2 tsp. garlic salt
- 2 tsp. dried basil
- 2 tsp. dried oregano
- 2 tsp. ground red pepper
- 2 tsp. ground black pepper
- In a small bowl, combine lemon pepper, paprika, garlic salt, basil, oregano, red pepper, and black pepper.
- Rinse fish fillets and pat dry. Season generously with spice mixture.
- In a cast-iron skillet over medium-high heat, heat oil until shimmering. Working in batches, gently place fillets into pan, ski-side up, and sear fish for about 2 minutes, flip and sear the other side, or until fish flakes easily with a fork. Fillets should be crusty. Continue cooking batches all fillets are cooked.
