Blackened Bass

Season bass filets, sear them in a skillet and serve with a citrus salad.

  • 2 lbs. bass fillets
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. lemon pepper
  • 1 Tbsp. paprika
  • 2 tsp. garlic salt
  • 2 tsp. dried basil
  • 2 tsp. dried oregano
  • 2 tsp. ground red pepper
  • 2 tsp. ground black pepper


  • In a small bowl, combine lemon pepper, paprika, garlic salt, basil, oregano, red pepper, and black pepper.
  • Rinse fish fillets and pat dry. Season generously with spice mixture.
  • In a cast-iron skillet over medium-high heat, heat oil until shimmering. Working in batches, gently place fillets into pan, ski-side up, and sear fish for about 2 minutes, flip and sear the other side, or until fish flakes easily with a fork. Fillets should be crusty. Continue cooking batches all fillets are cooked.
