Blueberry Breakfast Salad Bowl

Just the right amount of savory and sweet, this salad is a great way to get all your favorite breakfast flavors, plus some lovely garden greens.

Ingredients

  • 3 links chicken sausage
  • 1 Tbsp. coconut oil
  • 2 cups arugula
  • 1 cup cilantro
  • 1 cup fresh blueberries
  • 3 Tbsp. olive or avocado oil
  • 2 Tbsp. apple cider vinegar
  • 1 Tbsp. pure maple syrup
  • ½ tsp. salt
  • ½ tsp. freshly ground black pepper
  • 1 fig, cut in half

Directions

  • Brown sausage in coconut oil in a small skillet.
  • On a serving plate, toss together greens, berries, olive oil, vinegar, and syrup. Top with sausage, salt and pepper, and fig.
