This concentrated Blueberry Cordial is remarkably versatile—mix it with 3 to 4 parts sparkling water to make a refreshing summer drink, or use it as a base for fruity cocktails.

- 5 lbs. fresh blueberries
- 1 quart water
- 3 cups sugar
- Place blueberries in a nonreactive pot with the sugar and enough water to cover by 1".
- Bring to a steady simmer over medium heat; cook 30 minutes, or until berries have broken down.
- Remove from heat and crush the berries with a potato masher. Cool.
- Line a colander with cheesecloth; place the berry mixture in it and press down with the potato masher to release and strain all the juice.
