Blueberry Flummery

Ingredients

  • 2 Tbsp. cornstarch
  • ½ cup sugar
  • 1½ cups water
  • 2¼ cups frozen blueberries
  • 1 Tbsp. grated lemon zest
  • 3 Tbsp. lemon juice
  • 2 cups whipped cream

Directions

  • In a saucepan, combine the cornstarch and sugar and stir well. Stir in the water, blueberries, lemon zest, and lemon juice. Place over low heat and cook, stirring, for about 10 to 15 minutes, or until the flummery bubbles and thickens. Spoon into sherbet glasses. Let cool and chill at least 2 hours.
  • Top each serving with whipped cream before serving.
