Blueberry Oatmeal Cookies

These deliciously chewy oatmeal cookies have the sweet tart flavor of dried blueberries and crunchy nuts as special additions.

Ingredients

  • 1⁄2 cup butter, softened
  • 1⁄2 cup vegetable oil
  • 1 cup granulated sugar
  • 3⁄4 cup brown sugar
  • 2 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 2 Tbsp. honey
  • 2 large eggs
  • 2 Tbsp. milk
  • 1 1⁄2 cups all-purpose flour
  • 1⁄2 cup whole wheat flour
  • 1 1⁄2 tsp. baking soda
  • 1⁄2 tsp. salt
  • 2 cups quick-cooking oatmeal
  • 1 cup dried blueberries
  • 1⁄2 cup chopped walnuts

Directions

  • Preheat oven to 350°F. In large bowl, combine butter, oil, granulated sugar, brown sugar, vanilla, cinnamon, and honey and mix well.
  • Beat in eggs and milk until blended. Stir in flour, whole wheat flour, baking soda, and salt, and mix well. Stir in oatmeal, blueberries, and walnuts.
  • Drop by teaspoonful onto parchment or Silpat-lined cookie sheets about 2 inch apart. Bake for 11 to 14 minutes until cookies are light golden brown. Cool for 5 minutes, then remove to wire racks to cool completely.
