Blueberry Thyme Shrub

This slightly sweet sipping vinegar is perfect for adding to sparkling water, a cup of tea, or even a light summer vinaigrette. Or add it to a gin and tonic for a delicious flavor twist.

  • ¼ cup fresh blueberries
  • ¼ cup sugar
  • ½ cup apple cider vinegar
  • 1 large sprig fresh thyme


  • Place blueberries, sugar, vinegar and thyme in a half-pint mason jar. Seal tightly and shake gently to dissolve sugar.
  • Store in refrigerator, allowing at least 3 days for flavors to meld. Remove blueberries after 1 week. Enjoy within 6 weeks.
