Boiled Peanuts

Protein-rich hot boiled peanuts have been a staple snack in the South for decades. You must use raw peanuts for this recipe. These are sold in peanut growing regions of the southern United States and online.

  • 8 cups water
  • 1 lb. green (raw) peanuts in shells, rinsed well
  • 1 cup salt


  • In a large stockpot over medium-high heat, bring water to a boil. Add the peanuts and salt and cover. Boil for 2 to 5 hours, or until desired softness is reached, checking periodically to make sure the water has not evaporated. Add additional water as needed.
  • Drain, refrigerate, and eat within 48 hours or freeze in sealable, plastic storage bags.
