Boricha (Korean Roasted Barley Tea)

Roasted barley tea is considered a cooling drink, and is often served in the hot months of the year, but you can also enjoy this drink warm. It is caffeine free and has a nutty flavor similar to popcorn. This version also uses roasted corn, oksusu cha, to add a little natural sweetness, but you can add a little honey to this tea while still hot if you want it a little sweeter.

Ingredients

  • 4 quarts water
  • ½ cup roasted barley
  • ½ cup roasted corn

Directions

  • Bring water, barley, and corn to a boil. Once it is boiling reduce heat to medium-low and simmer for 25–30 minutes. Allow tea to cool then strain. Keep refrigerated and serve over ice.
