Bran Muffins

Sure, bran is healthy. But it can also be delicious, especially when you add sugar, butter, and spices!

Ingredients

  • 2 large eggs
  • 3 Tbsp. canola oil
  • ⅓ cup honey
  • ⅓ cup brown sugar
  • ⅓ cup molasses
  • 1 Tbsp. vanilla extract
  • 1½ cups buttermilk
  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • 1 cup wheat germ
  • 2¾ cups wheat bran
  • ⅔ cup oat bran
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg

Directions

  • Preheat oven to 375°F. Coat muffin pan with pan spray. Line with paper muffin cups. Combine eggs, oil, honey, brown sugar, molasses, vanilla, and buttermilk. Mix thoroughly. Set aside.
  • In a separate bowl, combine all remaining ingredients; stir to mix. Pour the wet mixture into the dry and stir together until just blended.
  • Fill muffin cups to the rim with muffin batter. Bake until risen and golden brown, about 20 minutes. A pick inserted into the middle muffin should come out clean. Cool muffin pan for 15 minutes before removing muffins.
