Brazilian Passion Fruit Dressing (Molho de Maracujã para Salada)
This sweet yet tangy dressing is excellent on salads and can also be used as a marinade for chicken or fish. If fresh passion fruit is unavailable, frozen passion fruit pulp is often available in the frozen-food section.

- ¼ cup passion fruit purée
- 2 Tbsp. sugar
- 1 Tbsp. fresh lime juice
- 1 Tbsp. orange juice
- 1 Tbsp. white vinegar
- ¼ tsp. salt
- ½ cup vegetable oil
- Place the passion fruit purée, sugar, lime juice, and orange juice in a saucepan and heat over medium-low heat, stirring constantly, until sugar is dissolved, about 2–3 minutes.
- Remove from heat and whisk in the vinegar and salt. Add the vegetable oil in a steady stream, whisking continuously.
- Refrigerate until ready to use, or for up to 1 week.
