Breakfast Custards

The smoked cheese gives this dish personality. Smoked provolone or provolone will melt nicely—smoked Gouda gives a great flavor but doesn’t always melt smoothly.

Ingredients

  • 1 tsp. butter
  • 2 large eggs
  • ¾ cup half-and-half
  • Pinch salt
  • 4 Tbsp. shredded smoked provolone cheese

Directions

  • Preheat oven to 350°F. Fill a medium-sized saucepan with water and bring to a boil. Butter two 6- or 8-ounce ramekins.
  • Combine the eggs and half-and-half in a medium-sized bowl and beat lightly. Season with salt and stir in the cheese. Pour the mixture into the prepared ramekins.
  • Place the ramekins in a baking dish and pour in enough boiling water to come about halfway up the ramekins. Bake for 20 minutes. Serve warm.
