Breakfast Rice with Spiced Peaches
Rice for breakfast? Don’t knock it till you’ve tried it! This is an excellent cold-weather breakfast. You can prepare the rice and peaches in advance, mixing in milk and honey as desired, and heat in your microwave.

- 1½ cups white rice
- 3 cups water
- 1 tsp. salt
- 2 cups sliced peaches
- ½ tsp. ground cinnamon
- ¼ tsp. ground nutmeg
- 1½ Tbsp. lemon juice
- 2 tsp. honey
- 2 cups warm whole milk
- Add salt to water in a medium saucepan and bring to a boil over high heat. Add rice, reduce heat to low, and simmer 20-25 minutes.
- In a separate saucepan, mix peaches, cinnamon, nutmeg, lemon juice, and honey. Bring to a boil over high heat. Reduce heat to low and simmer 10 minutes. Set aside.
- When ready to serve, add the warm milk to the rice, and then add the peaches.
