Breakfast Rice with Spiced Peaches

Rice for breakfast? Don’t knock it till you’ve tried it! This is an excellent cold-weather breakfast. You can prepare the rice and peaches in advance, mixing in milk and honey as desired, and heat in your microwave.

  • 1½ cups white rice
  • 3 cups water
  • 1 tsp. salt
  • 2 cups sliced peaches
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • 1½ Tbsp. lemon juice
  • 2 tsp. honey
  • 2 cups warm whole milk


  • Add salt to water in a medium saucepan and bring to a boil over high heat. Add rice, reduce heat to low, and simmer 20-25 minutes.
  • In a separate saucepan, mix peaches, cinnamon, nutmeg, lemon juice, and honey. Bring to a boil over high heat. Reduce heat to low and simmer 10 minutes. Set aside.
  • When ready to serve, add the warm milk to the rice, and then add the peaches.
