- 3 cups baby spinach leaves
- 4 large eggs, hard-boiled, peeled, and quartered
- 2 slices bacon, cooked and chopped
- ½ cup cucumber, sliced
- ½ avocado, diced
- ½ apple, sliced
- Juice of ½ lemon
- Arrange the spinach leaves on a plate and top with the eggs and bacon. Add the cucumber, avocado, and apple slices to top of the salad. Drizzle with lemon juice. Serve immediately.
