Breakfast Salad

Salad isn’t just for lunch and dinner anymore. Try this mix of delicious ingredients in the morning for a boost in energy and nutrients.

  • 3 cups baby spinach leaves
  • 4 large eggs, hard-boiled, peeled, and quartered
  • 2 slices bacon, cooked and chopped
  • 1⁄2 cup cucumber, sliced
  • 1⁄2 avocado, diced
  • 1⁄2 apple, sliced
  • Juice of 1⁄2 lemon


  • Arrange the spinach leaves on a plate and top with the eggs and bacon. Add the cucumber, avocado, and apple slices to top of the salad. Drizzle with lemon juice. Serve immediately.
