Brine-Marinated Salmon

Ingredients

  • 6 cups water
  • 1 Tbsp. salt
  • 2⁄3 cup brown sugar
  • 1⁄2 cup honey
  • 1⁄2 orange, sliced
  • 1⁄2 lime, sliced
  • 1⁄2 lemon, sliced
  • 4 sprigs dill
  • 1 fillet (4 lb.) Atlantic salmon or wild sockeye

Directions

  • Place all the ingredients except the salmon into a stockpot. Bring to a boil. Remove from heat immediately. Once the mixture is cool, submerge the salmon in it.
  • Marinate in the refrigerator for approximately 24 hours. Smoke the fillets over a 250° wood fire for approximately 2 hours, until the fillets are firm to the touch. Peel off the skin and serve.
