Broccoli-Cauliflower Salad with Creamy Lemon Dressing
Broccoli and cauliflower are nutritional powerhouses and give this salad a wonderful crunchy texture. A touch of lemon juice gives a tangy note to the creamy dressing.
Ingredients
- 1 cup sour cream
- 1 teaspoon dried oregano, crushed
- 1 teaspoon celery seeds
- 2 tablespoons fresh lemon juice
- 1⁄4 cup onion, finely chopped
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon freshly ground black pepper
- 4 cups romaine lettuce, roughly chopped
- 1 cup red bell pepper, cored and roughly chopped
- 1 cup broccoli, roughly chopped
- 1 cup cauliflower, roughly chopped
- 1 cup mushrooms, roughly chopped
- 1 cup frozen artichoke hearts, thawed and roughly chopped
- 6 kalamata olives, pitted and chopped
Directions
- In a medium bowl, whisk sour cream, oregano, celery seeds, lemon juice, onion, salt and pepper; set aside.
- In a large bowl, toss lettuce, bell pepper, broccoli, cauliflower, mushrooms, artichoke hearts and olives. Add dressing, toss gently and serve.
