Broccoli Slaw

Broccoli, carrots, raisins, and pine nuts add lots of fiber and flavor to this salad.

  • 3 cups blanched broccoli florets, chopped
  • 2 Tbsp. mayonnaise
  • 1 tsp. Dijon mustard
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. minced red onion
  • ¼ cup dried cranberries
  • ½ cup toasted pine nuts
  • ½ tsp. sea salt
  • ½ tsp. freshly ground black pepper

Directions

  • Mix all ingredients together.
  • Refrigerate at least 1 hour before serving.
