Brown Sauce

Out of cornstarch? You can substitute flour as a thickener in this recipe— just double the amount to 2 tablespoons.

  • 1 Tbsp. plus 1 tsp. oyster sauce
  • 3 tsp. hoisin sauce
  • 1 tsp. Xiaoshing wine
  • 1 tsp. soy sauce
  • 1⁄2 tsp. sugar
  • 1⁄2 cup beef broth
  • 2 Tbsp. water
  • 1 Tbsp. cornstarch


  • Combine all the ingredients, adding the cornstarch last, in a small saucepan. Bring to a boil.
  • Reduce the heat to medium-low and cook, stirring constantly to thicken mixture. The sauce should be neither too thin nor too runny, but thick enough to use as a dip, if desired. Serve immediately or refrigerate up to 3 days.
