Buckwheat Pasta

A pasta machine is best for rolling this dough. Buckwheat is an excellent source of fiber. It is high in iron and has a nutty taste.

  • 1⁄3 cup buckwheat flour
  • 2⁄3 cup flour
  • 1⁄2 tsp. salt
  • 1 egg, beaten
  • 2 tsp. water


  • Combine flours and salt. Make a well in the center.
  • Combine egg and water. Pour into the well in the flour mixture. Gradually bring the flour into the egg with a fork to form a dough. Knead dough for 10 minutes. Wrap in plastic.
  • Let rest 45 minutes before rolling with a pasta machine. Use immediately or dry by laying flat on a baking pan for 1 day. Store in an air-tight container.
