Serves: 4

  • 2 Tbsp. all-purpose flour
  • 1⁄2 tsp. paprika
  • 1⁄2 tsp. ground black pepper
  • 4 bone-in chicken breast halves (6 oz. each)
  • 1 Tbsp. vegetable oil
  • 1 can cream of chicken soup
  • 1 can cream of onion soup
  • 1⁄2 tsp. poultry seasoning

  • Preheat the oven to 350°F.
  • Mix together the flour, paprika, and pepper in a plastic food bag. Rinse the chicken pieces and pat dry, then shake in the flour mixture. Heat vegetable oil in a medium skillet over medium-high heat. Brown the chicken on both sides, about 10 minutes total.
  • Place the chicken pieces in a deep-sided baking dish. Combine the soups and poultry seasoning and add to the skillet, scraping to remove all bits. Pour over the chicken. Cover and bake for about 1 to 1 1⁄4 hours, or until the largest pieces are no longer pink in the center. The chicken makes a gravy-type sauce as it bakes.
