Buttered Rum Pineapple
The addition of rum deepens the flavors of the pineapple and the sugar in this simple dessert. If using a gas stove, remove the skillet from the heat when adding the rum.

- ½ cup brown sugar
- ¼ cup dark rum
- 3 Tbsp. butter
- 1 pineapple, peeled, cored and cut into ½" slices
- Place a skillet over medium heat. Once it is heated through, add the brown sugar, rum, and butter and stir until the butter is melted and bubbling.
- Place the pineapple slices in the skillet one at a time and cook for 3 minutes or until they’re warmed through. Serve while hot.
