Butterflied Cornish Game Hen

  • 1 Tbsp. chili powder
  • 1 Tbsp. onion powder
  • 1 Tbsp. garlic powder
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 1 Tbsp. olive oil
  • 2 Cornish game hens


  • In a small bowl, whisk together chili powder, onion powder, garlic powder, black pepper, and salt.
  • Using a pair of kitchen scissors, cut the spine out of a Cornish game hen by cutting about 1⁄2 inch to the right of the spine and then 1⁄2 inch to the left of the spine. Remove spine and open up the hen so that it lays flat. Tuck wings behind the body so that the entire hen is flat. Rub entire hen with olive oil and then the spices.
  • Preheat the panini press. Place hen (lying flat) on panini press. Close the lid and cook for 15 minutes, or until bird is thoroughly cooked.
  • Remove from press and serve warm.
