- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1⁄2 tsp. baking soda
- 1⁄2 tsp. salt
- 1 cup low-fat buttermilk
- 1⁄2 cup sugar
- 1 large egg
- 1⁄2 cup butter, softened
- 1 cup blueberries
- Preheat oven to 400°F. Spray a muffin tin with nonstick cooking spray.
- Mix the flour, baking powder, baking soda, and salt in a medium bowl.
- Whisk buttermilk, sugar, and egg together. Then add the butter and beat well. Add to flour mixture. Fold in the blueberries.
- Spoon batter into 12 muffin cups and bake for 20 minutes or until the muffins spring back when touched.
