Buttermilk-Blueberry Muffins

Sprinkle some powdered sugar on these muffins to make them pop in your mouth.

  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1⁄2 tsp. baking soda
  • 1⁄2 tsp. salt
  • 1 cup low-fat buttermilk
  • 1⁄2 cup sugar
  • 1 large egg
  • 1⁄2 cup butter, softened
  • 1 cup blueberries


  • Preheat oven to 400°F. Spray a muffin tin with nonstick cooking spray.
  • Mix the flour, baking powder, baking soda, and salt in a medium bowl.
  • Whisk buttermilk, sugar, and egg together. Then add the butter and beat well. Add to flour mixture. Fold in the blueberries.
  • Spoon batter into 12 muffin cups and bake for 20 minutes or until the muffins spring back when touched.
