Buttermilk Spice Cake

Ingredients

  • 1 Tbsp. butter
  • 1 cup sugar
  • 2 large eggs, beaten
  • 1 tsp. baking soda
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • ⅛ tsp. salt
  • 1 tsp. ground nutmeg
  • 1 tsp. ground cinnamon
  • 1 tsp. ground allspice
  • 1 tsp. ground cloves
  • 1 cup raisins

Directions

  • Preheat oven to 350°F. Grease an 8" square cake pan.
  • In a bowl, cream together the butter and sugar until well mixed. Add the eggs and mix thoroughly. In a small bowl, dissolve the baking soda in the buttermilk and stir into the sugar mixture. Sift together the flour, baking powder, salt, and all the spices directly onto the sugar mixture and mix well.
  • Stir in the raisins and pour into the cake pan. Bake for about 1 hour, or until a knife comes out clean. Invert onto a rack and let cool.
