Caesar Salad

For “authentic” Caesar salad, use only romaine lettuce. But if you prefer, you may use another green or mix several different types.

  • 1 Tbsp. extra-virgin olive oil
  • 2 Tbsp. well-beaten pasteurized egg product
  • 2 Tbsp. balsamic vinegar
  • 4 anchovy fillets
  • 1⁄2 cup shaved Parmesan cheese
  • 1⁄2 tsp. ground black pepper
  • 3 heads romaine lettuce, torn
  • 2 cups garlic croutons


  • In a small bowl, whisk together the extra-virgin olive oil, egg, vinegar, anchovies, cheese, and pepper.
  • Toss the romaine with the dressing, top with croutons, and serve.
