Caesar Salad
For “authentic” Caesar salad, use only romaine lettuce. But if you prefer, you may use another green or mix several different types.

Ingredients
- 1 Tbsp. extra-virgin olive oil
- 2 Tbsp. well-beaten pasteurized egg product
- 2 Tbsp. balsamic vinegar
- 4 anchovy fillets
- 1⁄2 cup shaved Parmesan cheese
- 1⁄2 tsp. ground black pepper
- 3 heads romaine lettuce, torn
- 2 cups garlic croutons
Directions
- In a small bowl, whisk together the extra-virgin olive oil, egg, vinegar, anchovies, cheese, and pepper.
- Toss the romaine with the dressing, top with croutons, and serve.
