Caipirinha—The Spirit of Brazil
This employs a liquor called cachaca, made with sugar cane juice, and yet it’s not rum! You can substitute white rum, and for a different taste, half a sweet, peeled tangerine.

- 1 small lime, cut in wedges
- 1 tsp. sugar
- 2 oz. cachaca or white rum
- Ice cubes
- Place lime wedges them in a glass, skin-side down; sprinkle with sugar.
- Muddle the lime with a pestle to release the juice. Do not overdo this or the oil in the skin will make the drink bitter. Add the cachaca and ice cubes. Stir and serve.
