- ½ tsp. ground black pepper
- ¼ tsp. cayenne pepper
- ½ tsp. lemon zest
- 1 Tbsp. minced cilantro
- 1 garlic clove, minced
- ⅛ tsp. salt
- 1 Tbsp. brown sugar
- Vegetable oil, as needed
- 4 swordfish steaks (5 oz. each)
- Prepare and preheat a grill. In a small bowl, combine pepper, cayenne pepper, lemon zest, cilantro, garlic, salt, and brown sugar and mix well. Sprinkle onto both sides of the swordfish steaks and rub in. Set aside for 30 minutes.
- Brush the grill with oil. Add swordfish and cook without moving for 4 minutes. Carefully turn steaks and cook for 2–4 minutes on the second side until fish just flakes when tested with fork. Serve immediately.
