- 1 cup chopped romaine lettuce
- 2 medium cucumbers, peeled
- ¼ cup chopped mint
- 1 cup full-fat canned coconut milk, divided
- ¼ cup unsweetened coconut flakes
- Place romaine, cucumbers, mint, ½ cup coconut milk, and coconut flakesin a blender and combine thoroughly.
- Add remaining coconut milk while blending.
- Divide smoothie mixture into 4 glasses.
