  • 1 cup chopped romaine lettuce
  • 2 medium cucumbers, peeled
  • ¼ cup chopped mint
  • 1 cup full-fat canned coconut milk, divided
  • ¼ cup unsweetened coconut flakes

Directions

  • Place romaine, cucumbers, mint, ½ cup coconut milk, and coconut flakesin a blender and combine thoroughly.
  • Add remaining coconut milk while blending.
  • Divide smoothie mixture into 4 glasses.
