Candied Pineapple Chunks
This makes a luscious snack all by itself, or you can use it for making fruitcake!

Makes: 4 cups
- 1 medium ripe pineapple
- 1 cup water
- 2 cups granulated sugar
- 1 tsp. powdered ginger
- ⅓ cup light corn syrup
- Peel pineapple and slice into bite-sized chunks.
- Bring sugar, water, ginger, and corn syrup to a boil. Add pineapple and simmer until pineapple turns translucent, about 45 minutes
- Drain on a rack, then store in an airtight container.
