Candied Pineapple Chunks

This makes a luscious snack all by itself, or you can use it for making fruitcake!

Makes: 4 cups


  • 1 medium ripe pineapple
  • 1 cup water
  • 2 cups granulated sugar
  • 1 tsp. powdered ginger
  • ⅓ cup light corn syrup


  • Peel pineapple and slice into bite-sized chunks.
  • Bring sugar, water, ginger, and corn syrup to a boil. Add pineapple and simmer until pineapple turns translucent, about 45 minutes
  • Drain on a rack, then store in an airtight container.
