Caramel Corn with Peanuts

Ingredients
- 1 1⁄2 quarts (6 cups) Simple Truth Organic™ Popcorn, popped (start with ½ cup popcorn kernels)
- 2 cups Simple Truth™ Roasted Peanuts
- 8 tablespoons Simple Truth™ Unsalted Butter
- 3⁄4 cup Simple Truth Organic™ Brown Sugar, packed
- 1⁄2 cup light corn syrup
- 1⁄4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1⁄4 teaspoon baking soda
Directions
- Preheat oven to 250°F.
- Place popcorn in a 13" x 9" glass baking dish. Sprinkle peanuts over top.
- In a small, heavy saucepan, combine butter, sugar, corn syrup and salt over medium heat. Bring to a boil, then reduce heat to low and simmer, about 4 minutes, stirring occasionally.
- Remove caramel from heat and stir in vanilla and baking soda. Pour caramel evenly over popcorn and peanuts.
- Bake 45 minutes, stirring occasionally. Remove popcorn from oven and transfer to a sheet of waxed paper to cool thoroughly. Store tightly covered for up to 2 days.
