Caramel Pudding

  • 1⁄2 cup sugar, divided
  • 1⁄2 cup boiling water
  • 3 Tbsp. cornstarch
  • 1⁄4 tsp. salt
  • 2 cups milk
  • 1 1⁄2 tsp. vanilla extract


  • In a small, heavy skillet, melt 1⁄4 cup sugar over low heat, stirring constantly, until it is a rich medium brown. Remove from the heat. Slowly add the boiling water. Return to the heat and stir until the lumps dissolve. Remove from the heat. This is the caramel syrup.
  • In a saucepan, combine the remaining 1⁄4 cup sugar, the cornstarch, and salt. Stir in the milk and then the caramel syrup. Place over medium heat and cook, stirring constantly, for about 10 minutes, or until thick. Cook for 2 minutes longer, or until it coats the back of a spoon. Add the vanilla. Pour into custard cups. Chill before serving.
