This topping is warm, gooey, and perfect for dipping apples, filling cupcakes, or topping your favorite sundaes.

- 1 cup sugar
- 6 Tbsp. vegan margarine
- ½ cup soy creamer
- Melt sugar in a large, heavy saucepan over medium heat, stirring constantly, until the sugar begins to boil and turns the color of light tea. Be very careful not to let the sugar burn. Whisk in the margarine until blended. Remove from heat.
- Slowly add the soy creamer, whisking until smooth. Be careful, as mixture may foam up and will be very hot.
- Allow caramel to cool for 3–4 minutes, then pour into a glass jar or bowl. Cool completely. Cover and store in the refrigerator.
