Caribbean Jerk Rub

This is piquant, hot, and sweet, all at once. Adding the rum will turn the rub into a paste.

Ingredients

  • 1 Tbsp. freshly ground black pepper
  • 1 Tbsp. cayenne pepper
  • 1 tsp. ground coriander
  • 1 tsp. ground cardamom
  • 1 Tbsp. garlic powder
  • ¼ tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • 1 Tbsp. dark brown sugar
  • 1 tsp. fresh lemon zest
  • 1 Tbsp. fresh orange zest
  • ¼ cup Jamaican rum (optional)

Directions

  • Mix all ingredients thoroughly. Rub on meat, fish, shellfish, or poultry. Let soak in for 1 hour and grill.
