Carrot Cake

  • 3 cups all-purpose flour
  • 2 tsp. baking powder
  • 2 tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1½ cups vegetable oil
  • 2 cups sugar
  • 3 cups grated carrots
  • 4 large eggs


  • Preheat oven to 350°F. Have ready an ungreased 9" tube pan.
  • Sift together the flour, baking powder, salt, baking soda, and cinnamon into a bowl. In another, larger bowl, mix together the oil, sugar, and carrots. Add the eggs one at a time, beating well after each addition. Gradually beat in the flour mixture, mixing well. Pour into the tube pan.
  • Bake for 1 hour, or until a knife comes out clean. Let cool on a rack.
