Carrot Chutney (Gajar Ki Chutney)

Carrot jam, popular in the Middle East is delicious on toast. Will keep for 2 to 3 days in the refrigerator.

Ingredients

  • 1½ cups peeled and thinly-sliced carrot
  • 1 tsp. grated gingerroot
  • 1 tsp. red chili powder
  • ¼ tsp. salt
  • 1 Tbsp. honey
  • 2 Tbsp. lemon juice

Directions

  • In a deep pan, bring the carrots, ginger, and 1 cup of water to boil. Reduce heat and cook until the carrots are tender, about 3 to 4 minutes. Drain and let cool for about 20 minutes. Add the red chili powder, salt, honey, and lemon juice; mix well. Refrigerate until needed.
