Carrot Pudding

Serve this pudding chilled in the summer and enjoy warm in the winter.

Ingredients

  • 4 large carrots, cooked and mashed
  • 1 small onion, grated
  • ¼ tsp. nutmeg
  • 1 Tbsp. raw honey
  • 1 cup canned unsweetened coconut milk
  • 3 eggs, beaten
  • ½ tsp. lemon juice

Directions

  • Mix together all ingredients.
  • Pour into a 2- or 4-quart slow cooker and cook on high for 3–4 hours.
