- 4 large carrots, cooked and mashed
- 1 small onion, grated
- ¼ tsp. nutmeg
- 1 Tbsp. raw honey
- 1 cup canned unsweetened coconut milk
- 3 eggs, beaten
- ½ tsp. lemon juice
- Mix together all ingredients.
- Pour into a 2- or 4-quart slow cooker and cook on high for 3–4 hours.
