Carrots with Orange-Honey Glaze
Honey and orange highlights the natural sweetness of carrots. This easy dish is the perfect side for roast chicken.

- 1 cup orange juice
- 4 Tbsp. honey
- 2 pounds small or baby carrots, peeled and trimmed
- 1 Tbsp. olive oil
- ½ tsp. salt
- Bring the orange juice to a boil in a large skillet. Add the honey and oil. Add the carrots and return to a simmer. Turn the heat to low.
- Simmer for 30 minutes, until the liquid is almost absorbed and the carrots are tender. Serve with salt.
