Cashew Cream

Serve the sauce with a veggie burger, as a spread on crackers, or as a dip for a crudités platter. For a flavor variation, blend in fresh herbs such as mint or basil. Olive oil can be substituted for the avocado.

  • 1 cup cashews, soaked overnight
  • ½ cup avocado
  • 1 tsp. minced garlic
  • ½ tsp. kosher salt
  • 3 Tbsp. lemon juice
  • ½ tsp. apple cider vinegar
  • ½ cup water


  • Blend all ingredients, except the water, in a blender or food processor until creamy. Gradually add just enough water to help the ingredients blend.
