Cauliflower Curry

Ingredients

  • 2 tsp. ground ginger
  • 2 tsp. ground cumin
  • 1 tsp. ground cinnamon
  • 1 tsp. ground turmeric
  • ¼ tsp. cayenne pepper
  • 2 tsp. salt
  • ⅛ tsp. sugar
  • 2 Tbsp. olive oil
  • 4 Tbsp. butter, divided
  • 1½ lbs. cauliflower florets, cut into equal-sized pieces
  • 1 cup chopped onion
  • ½ tsp. mustard seeds
  • 1½ cups puréed tomatoes

Directions

  • Combine all the spices, salt, and sugar; set aside. Heat the olive oil and 2 tablespoons of the butter in a large sauté pan. Lightly brown the florets. Remove and set aside.
  • Add the remaining butter and the onions and spice mixture and cook until the onions are wilted, about 5 minutes. Add mustard seeds and tomatoes. Simmer for 4 to 5 minutes until the sauce is slightly thickened.
  • Add the cauliflower, stirring until coated with sauce. Simmer, covered, for approximately 20 minutes or until the cauliflower is tender.
