Cauliflower Pureé

Ingredients

  • 1 lb. cauliflower florets, chopped
  • 1 clove garlic, peeled and chopped
  • ⅔ cup chicken broth
  • 1 tsp. salt
  • 4 Tbsp. whole milk
  • 1 Tbsp. butter

Directions

  • Simmer cauliflower, garlic, broth, and salt in a saucepan, covered, for 15 minutes, until tender.
  • Transfer cauliflower mixture to a food processor or blender. Add milk and butter.
  • Blend until smooth.
