Cava, Spain’s sparkling wine, is paired with yellow peach purée in this version of the Venetian classic, the Bellini. Try it with a couple of blueberries in the bottom of the glass.

- 1 oz. yellow peach purée, chilled
- 4 oz. Cava Spanish sparkling wine, chilled
- Pour the peach purée into a champagne flute. Add the Cava to the flute.
