Ceci Bean Burgers

When I grew up with my Italian-American family, my grandmother added Cecis (chickpeas) to everything! Now for a flavorful and healthy spin, they make the perfect version of a veggie burger!


Ingredients

  • 15 1⁄2 ounces can of Kroger Garbanzo Beans/Chickpeas
  • 1 egg, whisked
  • 1⁄4 cup panko bread crumbs
  • salt and pepper to taste
  • Optional: curry powder, smoked paprika, fresh herbs, grated onion, chopped kale
  • 1 tablespoon olive oil
  • 1 cup Chobani non-fat yogurt
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chive, chopped
  • 1⁄2 teaspoon red chili flake
  • 1 tablespoon fresh squeezed lemon juice
  • purple, green or orange cauliflower
  • 6 orange Private Selection grape tomatoes
  • white wine vinegar
  • pickled banana pepper rings
  • cucumber, thinly sliced
  • romaine lettuce
  • brioche buns

Directions

  • To Make Patties: - Mash Ceci (garbanzo/chickpeas) beans in a mixing bowl with a fork, until 2/3 are mashed and the rest are whole. - Add egg and bread crumbs and mix until well combined. Add salt and pepper to taste. Add optional seasonings to your preference. - Shape into two patties. - Heat a cast iron pan with 1 Tbsp. olive oil, and sear patties for three minutes on both sides, until they are crispy and warmed though.
  • To Make Special Sauce: - Combine non-fat yogurt, garlic, parsley, dill, chive, red chili flake, lemon juice and salt and pepper to taste.
  • Toppings: - Purple, green or orange cauliflower, sliced like a tomato and roasted or grilled until tender - Orange Private Selection grape tomatoes, sliced and mixed with white wine vinegar, salt and pepper - Pickled Banana Pepper Rings - Thinly sliced cucumber - Romaine lettuce
  • Building Your Burger: - Start with base of bottom half of Brioche Bun or lettuce leaves - Add Ceci patty - Top with sauce - Add layer of cauliflower, then cucumber, then tomatoes, then banana peppers - Top with brioche bun or lettuce
