  • 1 box (16.5 oz.) vegan spice cake mix
  • 1 can (16 oz.) pumpkin purée
  • 1⁄4 cup soy milk


  • Preheat oven according to instructions on cake mix package and lightly grease or line a muffin tin.
  • Combine all ingredients in a large bowl.
  • Fill muffin tin about 2⁄3 full and bake according to instructions on cake mix.
