Cheese and Onion Quesadillas
After trying quesadillas with more than just cheese, be adventurous and add some refried beans, guacamole, or black olives.

- 1 Tbsp. olive oil
- 1 medium onion, sliced
- 4 large corn tortillas
- ½ cup shredded Cheddar cheese
- Heat oil in skillet over medium-high heat until shimmering. Add onion and cook until softened and browned, about 10 minutes.
- Place 1 tortilla on a large plate and sprinkle with half of the cooked onions and shredded cheese. Top with another tortilla. Cook in the microwave for about 20–30 seconds or until the cheese is melted. Repeat with remaining ingredients.
- Cool slightly. Use a knife or pizza cutter to cut the quesadillas into 6 wedges.
