This cheesy cauliflower casserole is made with just a handful of ingredients to make it less overwhelming to grocery shop for your holiday dinner. Plus, it’s sure to be a crowd favorite.

Ingredients

  • 1 head cauliflower, cut into florets
  • 1⁄2 cup mayonnaise
  • 1 tbsp. yellow mustard
  • 1⁄2 tsp. salt
  • 1⁄2 tsp. pepper
  • 1 cup cheddar cheese, shredded
  • 1 tbsp. fresh chives, chopped

Directions

  • Preheat oven to 350°F. Prepare a 2–3-quart casserole dish with nonstick cooking spray.
  • In a large skillet, add about ¼” water and add cauliflower. Bring to a boil, cover, then cook about 3 minutes. Drain.
  • In a medium bowl, combine mayonnaise, mustard, salt and pepper. Stir in cauliflower and transfer into prepared dish. Sprinkle with cheese.
  • Bake 15-20 minutes, until cheese is melted.
  • Top with chives and serve. Refrigerate leftovers.
