This cheesy cauliflower casserole is made with just a handful of ingredients to make it less overwhelming to grocery shop for your holiday dinner. Plus, it’s sure to be a crowd favorite.

Ingredients
- 1 head cauliflower, cut into florets
- 1⁄2 cup mayonnaise
- 1 tbsp. yellow mustard
- 1⁄2 tsp. salt
- 1⁄2 tsp. pepper
- 1 cup cheddar cheese, shredded
- 1 tbsp. fresh chives, chopped
Directions
- Preheat oven to 350°F. Prepare a 2–3-quart casserole dish with nonstick cooking spray.
- In a large skillet, add about ¼” water and add cauliflower. Bring to a boil, cover, then cook about 3 minutes. Drain.
- In a medium bowl, combine mayonnaise, mustard, salt and pepper. Stir in cauliflower and transfer into prepared dish. Sprinkle with cheese.
- Bake 15-20 minutes, until cheese is melted.
- Top with chives and serve. Refrigerate leftovers.
