Chewy Ginger Cookies
These soft, chewy cookies are delectable with a cup of tea or coffee. Delicious spices give them just a touch of heat with the perfect amount of sweetness.

Ingredients
- 1⁄2 cup unsalted butter, softened
- 1⁄4 cup coconut oil
- 1 cup coconut sugar
- 1 large egg
- 1⁄4 cup molasses
- 2 1⁄4 cups spelt flour
- 2 tsp. ground ginger
- 1 tsp. ground cinnamon
- 1 tsp. baking soda
- 1⁄4 tsp. salt
Directions
- Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
- In a large bowl, cream together the butter, coconut oil, and coconut sugar until light and fluffy. Beat in egg. Stir in the molasses. In a separate bowl, sift flour, ginger, cinnamon, baking soda, and salt together. Gradually stir flour mixture into the butter mixture.
- Scoop out small 1 1⁄2-inch balls, place 2 inches apart on baking sheets, and bake for 8 to 10 minutes. Cool on baking sheet 5 minutes. Remove from baking sheet and cool on a wire rack.
