Chewy Ginger Cookies

The addition of molasses makes these cookies delightfully chewy.

Ingredients

  • 8 tbsp. (1 stick) unsalted butter, softened
  • 3⁄4 cup sugar, plus more for coating
  • 1 large egg
  • 1 1⁄2 cups all-purpose flour
  • 1 1⁄2 tsp. ginger
  • 1⁄4 tsp. ground cloves
  • 1⁄2 tsp. cinnamon
  • 1⁄4 tsp. salt
  • 1 tsp. baking soda
  • 1⁄4 cup molasses

Directions

  • Preheat oven to 350°F. Line baking sheet with parchment paper.
  • Using hand mixer, cream together butter and sugar in medium bowl until light and fluffy, about 3 minutes. Add egg and blend well.
  • Add flour, ginger, cloves, cinnamon, salt, baking soda and molasses and mix until dough is combined. Use small ice cream scoop to portion out dough balls. Roll in sugar and place on cookie sheet about 2 inches apart.
  • Bake 10 minutes or until set. Cool completely, storing any leftovers in an airtight container.
