Chicken Noodle Soup

This classic soup is a great way to treat a cold or warm up on a chilly day.

Ingredients

  • 1 Tbsp. olive oil
  • 2 cups chopped yellow onion
  • 2 cups chopped celery
  • 2 cups chopped carrots
  • 1 Tbsp. minced garlic
  • 1 Tbsp. dried basil
  • 1 Tbsp. dried tarragon
  • 1 Tbsp. dried thyme
  • 2 tsp. sea salt
  • 4 cups water
  • 1½ lbs. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup small pasta shells

Directions

  • Heat oil in a large pot over medium-high heat. Sauté onions, celery, and carrots for 8 minutes or until tender. Stir in garlic, basil, tarragon, thyme, and salt. Sauté 2 minutes more. Add water and bring to a boil. Reduce heat to medium-low and simmer for 20 minutes.
  • Add chicken and continue to simmer for 10 minutes or until chicken is cooked through. Stir in the pasta and simmer 10 minutes.
  • Remove from heat and serve.
